Applesauce Oat Muffins- Toddler and Freezer Friendly

Super easy and cute, these mini muffins are a hit in my home. They are gluten free and free of processed sugar. Simple ingredients and blender style cooking is always a win for us! Makes 24 mini muffins. These are great for the freezer, you can pop them in the microwave for 20 seconds or so and they are ready to consume. Or just pop them into a ziplock on your way out the door and they will be good once you reach your destination. When I make multiple batches of these I don't double the recipe like I normally would. This recipe is designed for 24 muffins, which is the size of a typical mini muffin tray and It is easier to me to make one batch at a time so its easier to get them to all come out evenly.

Not gonna lie, these are a touch bland. I eat a few when I'm hungry enough and they are in front of me but I'm not reaching for them in other situations. However, my toddler loves them. And I know there are lots of kids out there that like bland foods.

What you will need

A blender or a food processor to whip these up in.

Oats- 2 cups. I like to blend these up first which makes the batter turn out smoother

Applesauce- 1 cup. Applesauce is one of those things that you need to check the ingredient list for. Way too often there is unnecessary added sugar and its just not needed for applesauce, its plenty sweet with out it.

Milk- 1/2 cup. Any kind you like. I typically use goat because that is what my kid likes to drink so I always have it on hand but you can substitute whichever kind of milk you would like for your kiddo.

Egg- 1 large.

Baking Powder- 1.5tsp. Make sure its baking POWDER not soda. I see it happening all the time and I make the mistake myself sometimes as well. Baking soda does not have the same rising effects that powder does and makes for a bad tasting final product.

Cinnamon- 1 tsp. How can you not when it compliments apple so so well. Because of the outrageous amount of recalls for lead in cinnamon I am very careful about the brands I use. You can read more about that here.

Vanilla- 1 tsp. Helps make these muffins just a touch less bland.

How to make them

Step one: Preheat your oven to 350 degrees and line a muffin tray with liners or grease it well with butter. Add your oats to your blender or food processor and blend them for about 30 seconds until they become somewhat fine. The don't have to be like flour you buy at the store, whatever your blender or food processor does in 30-60 seconds will work great.

Step two: Add the rest of your ingredients to the blender and blend them until everything is well incorporated. Scrape the sides if you need and continue blending.

Step three: Scoop about 1.5 spoonfuls for each muffin. I typically scoop 1 heaping spoonful into each muffin and then spread the rest of the batter evenly through out the whole tray.

Step four: Bake for 20-25 minutes. Remove from oven and allow them to cool. I let the cool for a few minutes in the pan and then grab the paper liner and slide them onto the counter to finish cooling.
